Nova Scotia Strawberry Rhubarb Crisp
There is no better way to celebrate the beginning of summer in Nova Scotia than a Strawberry Rhubarb Crisp!

For the Filling
  • 1 cup white sugar
  • 3 tablespoons Speerville Mills’ Whole White Flour
  • 3 cups fresh strawberries (quartered)
  • 3 cups diced rhubarb
For the Topping
  • 1 cups Speerville Mills’ Whole White Flour
  • 1 cup packed brown sugar
  • ⅔ cup cold butter (cubed)
  • 1 cup Speerville Mills Newfound Oatmeal (or other rolled oats)
  1. Preheat oven to 375 F (190 C).
  2. In a large bowl, mix cane sugar, 3 tablespoons flour, strawberries, and rhubarb. Place the mixture in a 9x13 inch baking dish.
  3. Using a pastry blender, combine 1 cup flour, brown sugar, butter, and oats until crumbly.
  4. Crumble on top of the rhubarb and strawberry mixture.
  5. Bake 45 minutes in the preheated oven, or until crisp and lightly browned.
  6. Allow to cool five minutes before serving.
