Happy Mother’s Day! This is my first Mother’s Day and I am not letting this whole pandemic situation stop me from having a lobster dinner on Mother’s Day, even if it is just our little family of three enjoying them together. We also have baby bok choy in our subscription this week, for the first time. Boy choy, also known as Chinese cabbage, is a great addition to stir-fries. With a leafy green top and a hardier stem, bok choy adds a variety of textures once steamed and it can also be eaten raw, chopped up in a salad.
