Spinach is back and I personally couldn’t be more excited. I know, what a thing to get excited about, but hear me out! Spinach is a sign of SPRING, that’s right, spring is (almost) here and that means the weather is going to start getting better, which means we will begin to see much more variety in our local food diets. Not to mention that spinach is delicious, super healthy and extremely versatile.
This week we are sharing a recipe for classic spinach salad.

Cortland Apples (2lb) – Grown conventionally by Noggins Corner Farm in Greenwich, NS
- ⅓lb spinach
- 2 Eggs, hardboiled
- 2 tbsp sliced onion
- 2 slices bacon, cooked until crispy and crumbled
- ¼ cup grated mild cheese, such as gouda or mozzarella
- 1 tsp poppy seeds
- ¼ cup mayonnaise
- 3 tbsp olive oil
- 2 tbsp lemon juice
- ½ tsp salt
- Whisk all poppy seed dressing ingredients together, set aside
- Wash spinach, set aside
- Prepare toppings
- Toss spinach with poppy seed dressing
- Divide spinach between 4 small plates (or 2 large plates if you're serving this as a main)
- Layer toppings on top of spinach and serve
