Rootabaga – March 1, 2020

We did it, we made it to March! The days are getting longer and it is so nice to be able to get out for a short walk after supper, before it gets dark.

This week’s Rootabaga Subscription features celeriac, also known as celery root. While this funny looking vegetable closely resembles a mandrake out of Harry Potter, don’t let that fool you, celeriac is a great addition to soup, roasted in the oven or grated in a salad.

 
Seasonal eating tip: celeriac is a tasty substitute for celery throughout the winter months when celery is unavailable!
