Rootabaga – February 9, 2020

Valentine’s Day is right around the corner, and what better way to celebrate than with cake! That’s why I’m sharing a recipe for Beet Red Velvet Cake that I plan on trying this week. Along with beets, this week’s Rootabaga includes sweet potatoes, which we usually eat roasted alongside a whole chicken but I am also a huge fan of sweet potato soup and my sister in law always makes a delicious sweet potato recipe at Christmas with cinnamon and orange, needless to say sweet potatoes are versatile and delicious! Domesticated sweet potatoes originated in either Central or South America over 5000 years ago and they seem to be a very popular vegetable all over the world. The sweet potato plant does not tolerate frost but typically can be grown without the use of pesticides and if cured properly can be stored for up to 13 months after they are picked!
