Rootabaga – December 15, 2019

It is our last (regular) Rootabaga before the New Year! We will be closed December 24th to January 1st so we won’t have a subscription on December 29th. Next week we will be putting together our Christmas Dinner Veggies for our subscribers so if you don’t think you’ll need all of those veggies over the holidays make sure to let us know and we will pause your subscription until 2020!

 

This week’s subscription includes red beets from Elmridge Farm and with Christmas right around the corner  I thought I would share a recipe for easy pickled beets to have with your Christmas Dinner!

Emma Murphy is the founder of Uprooted Market & Café. Emma graduated from Dalhousie University in 2012 with a Bachelor of Science with a Double Major in Environmental Science and Environment, Sustainability & Society (ESS). Her degree focused largely on the negative impacts of our current food system, the importance of strengthening community, and the role of grassroots initiatives in supporting a local economy.
