There are so many delicious local fruit and veggies becoming available each day, I just love this time of year! This week we have spray free broccoli, which Elmridge Farm says “is a rare treat and only accomplished as a result of the row covers under which we plant our earliest transplants” and it will only be available for a limited time. I plan to use my broccoli for a classic broccoli salad this week with dried cranberries and sunflower seeds, delicious!

- 1 bunch broccoli, cut into bite sized pieces
- ⅓ cup dried cranberries
- ¼ cup sunflower seeds
- 4 slices bacon, cooked until crispy and crumbled
- ¼ cup red onion, diced
- 1 tbsp sugar
- ½ cup mayonnaise
- 2 tbsp cider vinegar
- Whisk together ingredients for the dressing in a small bowl, set aside
- In a large bowl combine the remaining salad ingredients
- Pour dressing over salad and mix in well
- Season to taste with salt and pepper
- Cover salad and refrigerate for an hour before serving
