Rootabaga – April 14, 2019

Less than one week until Lobster Season opens! I don’t know about you, but I’m pretty excited about that, I plan on using my potatoes to make a potato salad this week with hopes that we might get to have lobster ASAP.

Another exciting addition this week is that of greenhouse grown peppers! I love peppers for their versatility, often using them in a stir-fry or fajitas, on pizza or in pasta sauce.

Uprooted will be closed on Friday, April 19th and Sunday, April 21st for Easter, so pickup for next weeks Rootabaga will be on Monday or Tuesday, please let us know if this isn’t going to work for you.

Sunday Whole Chicken with Roasted Beets and Parsnips
Monday Leftover Chicken and Roasted Veg
Tuesday Fajitas with portobello mushroms, peppers and onions
Wednesday BBQ Sausages with roasted potatoes and sauerkraut
Thursday Panfried Haddock with Microgreen salad wth cucumber & tomato
Friday Pizza Night!
Saturday Lobster with Potato Salad and sliced tomato

Vegetarian Fajitas

Ingredients
Fajita Seasoning
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon ground cumin
Filling
  • 1tbsp olive oil
  • 1 large onion, sliced lengthwise
  • 2 peppers, sliced into approximately ½" thick strips
  • 2 portabello mushrooms, sliced into approximately ½" thick strips
Toppings (pick and choose which ones you like)
  • 4-6 Wraps
  • Grated cheese
  • Salsa
  • Sour Cream
  • Guacamole
Instructions
  1. Heat 1 tbsp oil in a large skillet
  2. Add onion, saute 1 minutes
  3. Add peppers, saute with onions 3-4 minutes (more if you like your veggies well done)
  4. Add mushrooms to pan
  5. Add spices and toss veggies to coat
  6. Cook for another 3-4 minutes, add 2-4 tbsp water if mixture seems dry
  7. Remove from heat and serve immediately
  8. Spoon filling onto wraps and top with desired toppings
