Saturday | Spinach Salad with egg, bacon, onion and poppyseed dressing and Apple & Blueberry Crisp for dessert! |
- ⅓lb spinach, washed
- 2 hard boiled eggs, sliced
- ½ onion finely sliced
- 4 slices bacon, cooked until crispy
- ¼cup grated gouda or mozzarella (optional)
- 2tbsp mayonnaise
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 0.5tsp salt
- 0.5tsp poppy seeds
- Combine all salad dressing ingredients
- Prepare salad ingredients
- Place spinach in a large bowl, toss with dressing
- Top spinach with onion, cheese, and hardboiled egg
- Crumble bacon over the top and serve
