It’s a long weekend and we are really looking forward to some quality family time this weekend! Do you have plans for the long weekend? This week’s apples are called Ambrosia, they are a sweet apple and best eaten fresh. There’s not much new to introduce this week as we head into the some of the less abundant weeks of Nova Scotian produce. Coming up in March we will start to see spinach, kale and hot house tomatoes, so hang in there!

Garlic – Grown spray free at Soggy Owl Farm in Middle Musquodoboit, NS
Cranberries – Grown conventionally by Indian Garden Farms in Hebbville, NS
- 3lb beets
- 2tbsp oil
- salt and pepper to season
- ¼ cup water
- Preheat oven to 425F
- Toss beets with oil, salt and pepper
- Place beets in 9x9 baking dish, pour water into bottom of of dish, cover tightly with aluminum foil
- Bake beets for about 1hr or until a knife inserts into beets easily
- Remove beets from oven, allowing them to cool enough to handle
- Peel beets (the peel should slip right off in your hands)
- Serve warm with butter or let cool and store covered in the fridge
